Tahbilk Eric Stevens Purbrick Shiraz honours the man who headed the winemaking at Tahbilk for over 40 vintages. Old plantings, including Shiraz vines from the 1930s, are the prime source.
The approach to winemaking is traditional; it has not differed significantly since 1860. The fruit is crushed and pumped into the winery's original oak vats to ferment with cultured yeasts. The juice is pumped over twice daily.
Maturation typically occurs over 18 months in 50% new French oak barrels. Once bottled, the wine is cellared for up to four years prior to release.
Inky crimson, Tahbilk Eric Stevens Purbrick Shiraz's ripe berry flavours are layered with warm spices, firm but fine tannins and a long, stylish finish. Cellaring potential is 20 years.
